Technologist’s wine tasting notes:
This wine combines the nobility of the Traminer variety with the unique nature of Vrachanski Misket. Tender greenish hues, an explosion of aromas – flowers, roses, lychee intertwined with citrus notes, succulent flavour and a refreshing finish
The two varieties are vinified separately due to the different lengths of time they require to mature. The technologies applied are consistent with the specific features of these two aromatic varieties. The optimal preservation of the aromas of the included varieties is guaranteed by the low temperature processing at 8-10˚С in inert atmosphere /dry ice СО2/, with maceration of the grape pulp at the discretion of the technologist from 2 to 6 hours at temperatures ranging from 6 to 8˚С. Fermentation at 12 to 14˚С. Once the wines are ready, following a scrupulous wine tasting process, the final blend is prepared aiming to arrive at a complex aroma and flavour, without any of the two varieties dominating over the other.
